In Wisconsin, the cheese making legacy runs deep and examples of third-and fourth generation Wisconsin cheese makers carrying on the family tradition are common. Joe Widmer, of Widmer’s Cheese Cellars in tiny Theresa, Wisconsin, is one such third-generation example. Widmer’s is best known for producing Brick cheese and traditional stirred-curd Colby, both Wisconsin originals. The little store carries a wide variety of cheeses, cheese spreads, gift boxes, and sausages. This box includes 7oz each of Colby, Jalapeno Cheddar, Mild Cheddar, Matterhorn Cheddar, Mild Brick, Butterkase, Aged Brick and Butterkase cheeses, 8oz Brick Spread, and a 12oz Leroy Sausage.
